Do you know what is better than Lords a’ Leaping? Cookies, but also: puppies! And I would feel remiss if I didn’t post something for the pupcicles in your life. Below is an easy recipe that will have you handing cookies out to all the dogs in your life.
I created it for my darling pupcicle, Addy, who was a lab and thus prone to overeating and being a bit chunky (me too, labradors! me too!). When the vet reminded me that dogs who are a healthy weight live longer, I knew I had to do something to trim down her waistline–but helllllo! How are you going to look at this face and NOT give her cookies?
The vet said not to go nuts, but maybe just take longer walks and cut back on the treats. For Addy, treats were life, so I created one that was a little healthier. What I like about this recipe is that it’s super easy and extremely versatile–you can pretty much switch up which fruits and veggies you want to use. Same for the oats and flour. While Addy was not picky by any stretch of the imagination, this version was her favorite (a very close 2nd was apple and pumpkin).
Btw, this makes a good-size batch of larger cookies, so if the dogs in your life are smaller, you could easily halve it. Or not. They freeze well.
Addy’s Cookies
- 1 cup strawberries
- ½ cup frozen spinach (it’s more like a heaping ½ cup)
- 1-2 Tbsp water
- 2 cups whole wheat flour
- 1 cut steel cut oats
Preheat oven to 350F. Line a cookie sheet with parchment paper or a silicone baking mat.
Using a food processor or immersion blender (or even an actual blender), puree strawberries and spinach together, using just enough water to get things started. Add oats and flour, mixing into ball of dough. Add more flour or water to adjust dough so that it is easy to roll.
Roll out dough on a floured surface. Cut into shapes (I use mini cookie cutters) or into small squares. Place on the cookie sheet. Because there are no leaveners in this, you can actually place them very close together on the cookie sheet to bake.
Bake for about 15 minutes (less if you want softer cookies or up to 20 minutes if you want something crunchier), carefully flipping the cookies half way through baking. Store in an airtight container for about 1 week. Because it does make a larger batch, I like to store them in the freezer and pull out a couple of days worth of cookies at one time.
Don’t forget the most important family member this holiday season. Trust me, you’ll get extra puppy kisses for your effort!
