Okay, okay…I have to admit that of all the birds in this song, the swans are the ones I would happily accept. Never mind the fact that living in NYC, I don’t have a pond nor the space to build one big enough for seven of them!
The next best solution? Cookies!
At first glance, these cranberry orange cookies seem like a good, basic cookie but man-oh-man, when you eat them, you realize they are delectable! The original recipe calls for a glaze, which I’m sure this would take them to a whole other level of deliciousness, but these never seem to last that long…
Cranberry Orange Cookies
- 1 cup dried cranberries
- 1 cup butter, softened
- 1 cup sugar
- Zest and juice of 1 orange
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 teaspoon baking soda
- 2 1/2 cups flour
Preheat oven to 375°F. Line a baking sheet with parchment paper or silicone baking mat.
Place the dried cranberries in a small bowl and cover with water. Allow them to soak for 5-10 minutes. Drain and pat dry. Roughly chop. I use a food processor for a couple of pulses, but a knife works as well. You still want chunks–just smaller ones.
In a medium bowl, sift together flour and baking soda. Set aside.
In a large bowl/stand mixer bowl, mix the butter and sugar on medium speed until light and fluffy. Add in the zest, orange juice, egg, and vanilla. Mix until combined, scraping down the sides of the bowl as needed.
Reduce speed of mixer to low and slowly mix in the flour until just combined.
Add the cranberries into the dough and mix until evenly incorporated.
Scoop 1 tablespoon of dough and roll into a ball. Space evenly on a baking sheet and flatten slightly. Bake for 8-10 minutes, until the edges are slightly golden. Do not over bake–unless you need hockey pucks for the kiddos.
Allow the cookies to sit on the baking sheet for a few minutes before transferring to a wire rack to cool.
If you’d like to go above and beyond, you can glaze them by mixing together 1 cup powdered sugar and 1-2 Tbsp orange juice in a small bowl. Drizzle the glaze onto each cookie and allow the glaze to set.
